Strawberry Preserves and Pear Port Compote from Lady Janet and
Mistress Gwenhwyfar

The basis for the strawberry jelly was taken from Delightes for Ladies by Hugh Plat, 1609. It was modified for the modern palate by using a much smaller ratio of rosewater to water. I did try a version with modern isinglass, but since it is liquid I am not sure if desired result was reached. Gelatin has been used in the final product here, so it will have much firmer texture if kept in the fridge. A good stirring is also recommended because the jelly does separate somewhat. Enjoy!

Nicknamed "Boozy Pears" at a Royal Travel Fund fund-raising auction, it has proven a local favourite! This is a more modern but tasty preserve that you will no doubt enjoy.
